As the seasons shift, especially towards the bounty of spring and summer, our excitement for fresh produce inspires new recipes. June, in particular, brings forth an abundance of local ingredients, from juicy berries to aromatic citrus fruits. This time of year is perfect for recipes that embody freshness and light, and these lemon poppy seed donuts perfectly fit the bill. Lemon, with its bright and uplifting aroma, instantly evokes the feeling of sunshine and renewal, making it an ideal star ingredient for spring baking.

Why You’ll Adore These Vegan Lemon Poppy Seed Donuts

These vegan lemon poppy seed donuts aren’t just a dessert; they’re a celebration of flavor and mindful eating. Each donut is generously infused with the vibrant essence of fresh lemon and, of course, a delightful scattering of poppy seeds, ensuring that every bite is as visually appealing as it is delicious.

Beyond their incredible taste, these donuts stand out for their health-conscious qualities. Unlike their deep-fried counterparts, these treats are baked in a donut pan, significantly reducing their fat content and eliminating the need for excessive oil. They are also meticulously crafted to be gluten-free and dairy-free, making them accessible to a wider audience without compromising on texture or taste. The absence of dairy means they’re perfect for those with lactose intolerance or individuals following a plant-based diet.

While these donuts maintain the delightful sweetness expected from any good dessert (because, let’s be honest, a donut needs its sweetness!), we’ve opted for a balanced approach. The donut batter itself benefits from the natural sweetness of coconut oil, complemented by organic cane sugar. The crowning glory, the glaze, is a classic blend of powdered sugar and fresh lemon juice, ensuring that tangy lemon flavor truly shines through and provides that signature shiny finish. This thoughtful combination ensures a treat that satisfies your sweet tooth without being overly heavy.

For those looking to further manage their sugar intake, this recipe is wonderfully adaptable. You can easily substitute the cane sugar in the donut batter with alternatives like stevia or xylitol, adjusting to your preferred level of sweetness. Similarly, if gluten is not a concern for you, a regular all-purpose flour can be used in place of the gluten-free flour blend, offering flexibility to suit individual dietary needs and preferences. This versatility makes the recipe a fantastic staple for any kitchen.

While the lemon poppy seed glaze adds an undeniable layer of decadence and flavor, these donuts are also incredibly delicious on their own, without any icing. Opting for them unglazed makes them an even healthier snack, perfect for a light breakfast or an afternoon pick-me-up. However, for many (including us!), the sweet, tangy glaze is an essential part of the donut experience, providing that extra burst of flavor and a beautiful finish.

To achieve the perfect donut shape, a donut pan is key. We highly recommend this donut pan for consistent results. If you don’t own one or prefer not to purchase one, don’t worry! You can easily adapt this recipe by baking the batter in muffin tins, creating delightful lemon poppy seed muffins instead. While they won’t have the classic donut shape, they’ll still deliver all the amazing flavors.

Once baked and cooled, these delicious donuts can be stored in an airtight container for a couple of days. For the best flavor and texture, however, we recommend enjoying them as soon as possible. Freshly baked donuts are always at their peak, maintaining their moistness and tender crumb before they have a chance to dry out. They make for a wonderful treat to share with family and friends, or to savor by yourself with a cup of coffee or tea.

Description

Say hello to your new favorite treat! These baked donuts are loaded with bright lemon and crunchy poppy seed flavor, baked to airy perfection.

Recipe adapted from it doesn’t taste like chicken.

Ingredients

Donuts

  • 2 cups all-purpose gluten-free flour blend
  • 1/2 cup organic cane sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Zest of 2 lemons (approximately 2 tsp)
  • 2 tbsp poppy seeds
  • 1 1/3 cup almond milk (or other plant-based milk)
  • 2 tbsp fresh lemon juice
  • 1/4 cup coconut oil, melted
  • 2 tsp vanilla extract

Icing

  • 1 cup powdered sugar
  • 1-2 tbsp almond milk
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp lemon zest
  • 2 tsp poppy seeds

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease your donut pan with cooking spray.
  2. In a large bowl, whisk together all the dry ingredients for the donuts: gluten-free flour blend, cane sugar, baking powder, baking soda, salt, lemon zest, and poppy seeds. Ensure everything is well combined.
  3. In a separate medium bowl, combine the wet ingredients: almond milk, fresh lemon juice, melted coconut oil, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula or wooden spoon just until everything is combined. Be careful not to overmix, as this can lead to tough donuts. A few lumps are perfectly fine.
  5. Transfer the donut batter into a piping bag or a large ziplock bag with a corner snipped off. This makes filling the donut pan much easier and tidier.
  6. Pipe the batter evenly into the prepared donut pan, filling each cavity about two-thirds full.
  7. Bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  8. While the donuts are baking, prepare the icing. In a small bowl, whisk together the powdered sugar, almond milk, lemon juice, vanilla extract, lemon zest, and poppy seeds until you achieve a smooth, pourable consistency. Add more almond milk sparingly if the icing is too thick, or a little more powdered sugar if it’s too thin.
  9. Once baked, remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  10. When the donuts are fully cooled, dip the top of each donut into the prepared lemon poppy seed icing. Allow any excess glaze to drip off, then place them back on the wire rack. Let the icing set for about 30 minutes before serving.

Notes

We use this donut pan for perfectly shaped baked donuts. Its non-stick surface ensures easy release and consistent results.

For gluten-free baking, some flour blends may not include xanthan gum, which is essential for providing structure and preventing crumbling in gluten-free recipes. If your chosen gluten-free flour blend does not already contain xanthan gum, we recommend adding 1/4 teaspoon of xanthan gum to the dry ingredients for optimal texture and rise.

Fresh lemon zest and juice are crucial for the vibrant flavor in this recipe. Avoid using bottled lemon juice if possible, as it lacks the brightness of freshly squeezed lemons.

Feel free to adjust the amount of poppy seeds to your preference. For a stronger texture and visual appeal, you can add an extra teaspoon to both the donut batter and the glaze.
