Ingredients
Crust:
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup refined coconut oil, melted
- 1/4 cup maple syrup
- 1/2 tsp almond extract (or vanilla extract)
- 1/4 tsp salt
Pumpkin pie filling:
- 2 1/2 cups pumpkin puree (homemade or canned)
- 1/2 cup full-fat coconut milk
- 3 tbsp cornstarch
- 1/4 cup maple syrup
- 1/4 cup coconut sugar (can sub organic cane sugar)
- 1/4 tsp salt
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
Instructions
