  1. Add all the ingredients except for the chocolate chips to a food processor and pulse together until combined. Scrape down the sides of the food processor as needed.
  2. Add the chocolate chips and pulse a few times to combine.
  3. Roll into balls, using about one tablespoon of dough per ball.
  4. Pour some shredded coconut onto a plate and roll each ball in the coconut to coat.
  5. Place the energy balls in an airtight container in the fridge to set for at least 2 hours.
  6. Store in the fridge.
