Noodles

  • 1/2 pack rice noodles (8oz)
  • 1/2 cup bean sprouts
  • Garlic sprouts (can sub sliced green onion)
  • 1 handful cashews, roughly chopped

Sauce

  • 2 spring onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp peanut butter
  • 2 tbsp sweet chilli sauce
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce (*optional or just more light soy sauce)
  • 2 tbsp rice vinegar
  • 1 tsp chilli flakes
  • 2 tbsp water
  • 10 sichuan peppercorns, ground* (see note)

Instructions

  1. Place the rice noodles in a bowl with warm water and let them soak for 5-10 minutes while you prepare the sauce. This allows them to soften and begin cooking.
  2. In a small bowl, whisk together all the sauce ingredients until well combined and smooth. Set this flavorful sauce aside.
  3. Add about 1/4 cup of water to a large pan or wok and heat on medium until the water begins to bubble gently. Add your soaked rice noodles to the pan, stirring them consistently until they absorb the water. Repeat this process, adding a few more tablespoons of water at a time, until the noodles are soft but still retain a slight bite (al dente).
  4. Reduce the heat to medium-low. Add the prepared sauce, bean sprouts, and garlic sprouts (or sliced green onion) to the pan. Stir everything together thoroughly until the noodles are evenly coated in the rich, spicy sauce.
