Instructions
- Heat the butter (or olive oil) in a large, heavy-bottomed pot over medium heat. Add the finely chopped shallots and garlic and sauté for 2-3 minutes until translucent and fragrant. Do not brown.
- Add the Arborio rice, salt, Watkins organic ground black pepper, and Watkins organic onion powder. Stir everything together to coat the rice grains, cooking for another 1-2 minutes to lightly toast the rice.
- Begin adding the hot vegetable stock, approximately 1/3 to 1/2 cup at a time. Stir frequently, waiting until each addition of liquid is almost completely absorbed by the rice before adding the next. Repeat this process until about 3 cups of stock have been used.
- Stir in the Pomi strained tomatoes and fresh lemon juice, mixing well to incorporate them into the rice.
- Continue adding the remaining hot vegetable stock, ladle by ladle, stirring consistently, until the rice is cooked to an al dente consistency (tender but with a slight, firm bite in the center). This process usually takes about 15-20 minutes after adding the tomatoes.
- Remove the pot from the heat. Stir in the grated Parmesan cheese until fully melted and combined. The risotto should be loose and creamy (all’onda); if you run a spoon through it, it should slowly come back together. Taste and adjust seasoning with additional salt and pepper if needed.
- (Optional Garnish) For roasted cherry tomatoes: Lightly coat cherry tomatoes in olive oil, salt, and pepper. Place them on a baking sheet and roast in a preheated oven at 400°F (200°C) for 15 minutes, or until softened and slightly blistered. Serve the risotto immediately, topped with roasted tomatoes and fresh basil.
Notes
*It is crucial to use hot stock when making risotto to maintain the cooking temperature of the rice and ensure even cooking. Always warm your stock in a separate pot or microwave before adding it to the risotto.
The amount of stock needed can vary slightly depending on the rice, heat level, and desired consistency. Add more or less as necessary until the risotto reaches your preferred texture and the rice is perfectly al dente.
Remember, the final texture of risotto should be loose and flowing (“all’onda”), not overly thick or gummy. A good test is to run a spoon through the center; the risotto should slowly seep back together, creating a satisfying wave-like motion.
