These Vegan Dan Dan Noodles are made with a homemade spicy chili oil and are packed with flavor!


Ingredients

Chili oil:

  • 1 cup sunflower oil (or any neutral tasting oil)
  • 1/4 cup smoked chili flakes
  • 2 tbsp Asian chili powder (or regular chili powder)
  • 1 cinnamon stick
  • 2 tbsp Sichuan peppercorns
  • 1 bay leaf
  • 2 star anise
  • 1/2 tsp salt

Veggie grounds:

  • 1 tbsp vegetable oil
  • 1 pack veggie ground round (I use Yves veggie ground round)
  • 2 garlic cloves, minced
  • 1 tbsp dark soy sauce (or gluten-free soy sauce)
  • 1 tbsp hoisin sauce

Noodle sauce:

  • 3 tbsp Chinese Sesame Paste (can sub tahini or peanut butter)
  • 1 tbsp soy sauce (gluten-free if needed)
  • 1 tbsp agave
  • 1/2 tbsp rice vinegar
  • 1 garlic clove, minced
  • 2 tbsp water

Other ingredients:

  • 400 grams noodles, cooked according to package directions (I use gluten-free spaghetti. Rice noodles work too.)
  • 2 green onions, chopped
  • sesame seeds to garnish

Instructions

  1. Make the chili oil: In a small saucepan, toast the cinnamon stick, Sichuan peppercorns, star anise, and bay leaf on medium heat for about 2 minutes until they become lightly fragrant. Add the sunflower oil and continue to cook on medium-high heat until the oil begins to bubble gently, approximately 5 minutes. Remove the pan from the heat, then stir in the smoked chili flakes and salt. Carefully transfer the chili oil to a mason jar and store it in the fridge.
  2. Prepare the veggie ground: Heat the vegetable oil in a large skillet over medium-high heat. Add the veggie ground and minced garlic, mixing them together. Cook for 3-4 minutes, stirring occasionally, until the veggie ground starts to brown slightly on the bottom. Reduce the heat to medium-low, then add the soy sauce and hoisin sauce, mixing until the veggie ground is evenly coated. Remove from heat and set aside.
  3. Whisk the noodle sauce: In a small bowl, combine all the noodle sauce ingredients (Chinese sesame paste, soy sauce, agave, rice vinegar, minced garlic, and water). Whisk well until everything is thoroughly combined and smooth.

Assemble your bowls: You can either mix all the ingredients (cooked noodles, prepared veggie ground, noodle sauce, and chili oil) together in a large saucepan before serving, or assemble individual bowls. Prepare the chili oil a day (or several days) in advance. The longer it sits in the fridge with all the spices, the more intense flavor it will have!

Some brands of soy sauce and tamari can be saltier than others. Be aware of this as you make the recipe and adjust the amount as needed to achieve your preferred taste.
