Instructions

  1. Prepare the Tofu: Begin by draining the extra-firm tofu. Place it between a few layers of kitchen towel or paper towel and gently press to squeeze out as much water as possible. This step is critical for crispy tofu! Once pressed, cut the tofu block into uniform 1-inch cubes.
  2. Coat the Tofu: In a medium bowl, gently toss the tofu cubes with the 1 tablespoon of cornstarch until each piece is evenly coated. This thin layer of cornstarch will create a beautiful, crispy crust when fried.
  3. Fry the Tofu: Heat 2 tbsp of avocado or vegetable oil in a large non-stick pan or wok over medium-high heat. Add the coated tofu in a single layer, making sure not to overcrowd the pan (cook in batches if necessary). Let the tofu cook undisturbed for 2-3 minutes on each side until it turns golden brown and develops a crispy crust. Once cooked and crispy, remove the tofu from the pan and set it aside.
  4. Sauté the Vegetables: Add a touch more oil (about 1 tbsp) to the same pan if needed. Add the chopped red onion, minced garlic, minced ginger (if using), broccoli florets, and bell peppers. Sauté for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp and vibrant.
  5. Combine and Sauce: Return the crispy tofu back into the pan with the sautéed vegetables. In a small bowl, whisk together all the ingredients for the stir fry sauce (vegetable broth, soy sauce, honey/maple syrup, rice vinegar, sesame oil, sriracha, and 1 tbsp cornstarch). Pour the prepared stir fry sauce over the tofu and vegetables in the pan, mixing everything together until all ingredients are evenly coated in the glossy, thickened sauce. Cook for another 1-2 minutes until the sauce has thickened to your desired consistency.
  6. Serve: Serve your delicious Weeknight Tofu Stir Fry immediately on its own, or traditionally over a bed of steamed rice or your favorite rice noodles. Garnish with toasted sesame seeds and fresh green onions if desired for extra flavor and visual appeal. Enjoy your 30-minute vegan meal!

Notes

For the absolute best crispy tofu, always ensure you use extra-firm tofu and press out as much excess liquid as possible. However, if you prefer a slightly softer texture, firm tofu also works wonderfully in this recipe.

Remember the golden rule of tofu frying: don’t peek or disturb the tofu prematurely! Allow it ample time to brown on each side (2-3 minutes) before attempting to flip, this prevents sticking and ensures a perfectly crispy crust.

Storage: Store any leftover tofu stir fry in an airtight container in the refrigerator for up to 3 days.

Reheating: For best results, reheat the stir fry in a pan on the stove over medium heat with a touch of oil to help the tofu crisp up again. Alternatively, you can reheat it in the microwave, though the tofu will be softer.
